MATCHING MENUS & WINE LISTS
Meuns and wine lists are often presented to guests as the equivalent of a 'blind date'! They might be a good match or they might not. Guests often see wines on a list they do not recognise. But in my experience, waiters do not know how to describe and sell these wines! What about Perhaps menus should be presented with suggested wines as appropriate I suggest that consideration should be given to writing lists so that it indicates which wines go best with specific dishes. Remember, customers love informed advice and they tend to act on it. I know I do! rather than should compliment the other.
