As interest in cooking continues to increase, Ballymaloe Cookery School continues to innovate. Darina Allen told me recently that the finishing touches are been put to a new milking parlour! It's neat, just room for three cows. Students can learn to milk and then, in an adjoining space, use the milk to produce cheese and yoghurt. How clever!
